Ingredients

- 1 ½ cups all-purpose flour
- ¼ cup sugar
- ¼ cup brown sugar
- ½ tsp baking powder
- 1 pinch salt
- 1 egg
- 1 tsp vanilla extract
- ½ cup Truly Grass Fed Unsalted Butter, cold and cut into cubes
Filling:
- ½ tbsp cornstarch
- ¼ cup sugar
- 1 tbsp lemon juice
- 2 cups fresh blueberries
Instructions
- Line an 8X8 baking dish with parchment paper.
- Preheat oven to 375F.
- In a mixing bowl, whisk flour, sugar, brown sugar, baking powder and salt.
- In a small mixing bowl, whisk egg and vanilla. Add egg mixture and butter to flour mixture and use a form to make it crumbly and combined. Press half the mixture into the pan in an even layer.
- In a separate bowl, combine blueberries with sugar, lemon juice and cornstarch. Toss. Pour blueberries over crust. Then crumble the rest on top.
- Bake for 35 minutes or until top is golden brown. Let cool then cut into squares.
