Irish Potato Pancake with Herb Butter


  • 6 Potatoes
  • ¼ cup Flour
  • 3 tbsp. Truly Grass Fed Unsalted Butter
  • 3 tbsp. Scallion, chopped
  • Salt and Pepper
  • Herb butter:
    • 3 tbsp. Truly Grass Fed Unsalted Butter
    • 1 tbsp. Dried Herbs Mix (we used basil, oregano, rosemary and thyme)


  1. Peel potatoes and grate them.
  2. Place them over a strainer or sieve and press to remove excess water.
  3. Place the potatoes in a bowl and add flour and salt and pepper. Mix carefully.
  4. In a small bowl, mix butter with dried herbs.
  5. In a non-stick skillet, melt 1 tbsp. of the dried herbs butter, add the potatoes mix and cook at medium heat until golden – around 15 minutes -, flip them over and cook for 15 more minutes.
  6. Remove from heat, cut in triangles and serve with chopped scallion and extra herbs butter.
