tbsp Truly Grass Fed Unsalted Butter
cup yellow onion, chopped
celery stalks, thinly sliced
cup all-purpose flour
cups low-sodium chicken broth
large broccoli head, finely chopped
large carrot, grated
cup whole milk
cup heavy cream
cups Truly Grass Fed Aged Cheddar, shredded
Salt, to taste
Pepper, to taste
Melt butter in a large pot over medium heat.
Add onion and celery and cook for 5 minutes until soft.
Whisk in flour and let cook for 1 minute.
Slowly add chicken broth and season with salt and pepper.
Stir in broccoli and carrots. Bring to a boil and reduce heat to low.
Let simmer for 20 minutes until vegetables are tender.
Slowly add milk and cream and bring to a simmer, then stir in cheddar.
Season with more salt and pepper, and top with more cheddar. Serve with fresh bread.
