small yellow onion, diced
tbsp olive oil
cloves garlic, minced
oz low-sodium chicken broth
oz canned green chilis
tsp cumin powder
tsp paprika
Salt and pepper, to taste
cup heavy cream
oz cannellini beans, drained and rinsed
oz white navy beans, drained and rinsed
cups cooked chicken, shredded
cup Truly Grass Fed Aged Cheddar, shredded
Fresh cilantro
Tortilla chips
Avocado, sliced
Heat olive oil in a large pot.
Add onion and sauté until softened.
Add garlic and cook for 1 minute.
Add chicken broth, green chilis, and spices.
Bring mixture to a boil, then reduce to a simmer for 10 minutes.
Stir in beans, chicken, and heavy cream. Let cook and come back up to temperature.
Serve hot with more cheese, cilantro, avocado, and tortilla chips.
